Yes, carbon filters can definitely be used with RO systems, usually as a pre-filter or a polishing stage, depending on what you are trying to improve. Extra stages can be useful, but they also add more maintenance points. Every cartridge has to be replaced on time, and pressure can drop if the setup is overloaded. A simple layout with compatible standard-size filters is usually easier to manage than adding parts just because there is space under the sink.
